Lemon and Apple Yogurt Cake

As today I woke up with the whim of eating something sweet, here you have the first sweet recipe: Lemon and apple yogurt cake.

 

To be honest, this recipe I have done it during the Covid-19 lockdown plenty of times. I love having a piece of sponge cake for breakfast with a good coffee. Although it took us ages to get flour those days, once we got it, we went crazy.

Ingredients

Important: do not throw away the yogurt container since it’s what we are going to use as a measure of the other ingredients.

 

3 Eggs

1 Lemon yogurt of 120gr

2 Apples

2 Lemons

Baking powder *

 

Using the yogurt container as a measure we will add:

 

2 x Sugar

1 x Sunflower Oil

4 x Flour

 

* The baking powder will depend on the one you have. Usually, the package already says the amount of baking powder to put in depending on the flour you have added. Pay attention to what the manufacturer tells you.

Elaboration

STEP 1:

 

We will preheat the oven 180º and cover the base of a removable mold with butter.

 

STEP 2:

 

In a bowl, we will put the eggs, the lemon yogurt, the sugar, the flour, the sunflower oil, the baking powder and we will mix everything well.

 

STEP 3:

 

Next, we will wash the apples and cut them into squares. We like them with the skin but if you want, you can remove it. Therefore, we will add it to the bowl with the rest of the ingredients.

 

STEP 4:

 

Mix everything well until a homogeneous cream with apple pieces is left. Keep it in the fridge for about 20 minutes.

 

STEP 5:

 

After 20 minutes, put everything in the bowl that we have with butter and place it in the oven for 30 minutes at 180º.

 

When it begins to take colour, check with a knife or a stick if it’s ready. If it doesn’t appear stained, it’s ready. If it still comes out creamy, it needs more time.

 

STEP 6:

 

We are going to be a bit crazy and we are going to add some icing sugar on it. We never buy it since if we want to do it, it’s as simple as putting sugar in a container and crushing it with the whisk. With the help of a strainer, we will decorate the cake with the icing sugar.
