Salmon and Mushroom Spaghetti

Truth is, that this dish saved me many nights during the 25 day trip I did with my family through Norway, so we love it so much.
It’s super easy to do, so let’s get to work!

Ingredients
250g of Spaghetti
1 Onion
5 Mushrooms
300g of Salmon
250ml of double cream
Parmesan cheese (amount according to your taste)
Elaboration
STEP 1:
First, we will make the sauce and then you will understand why. The first thing will be to cut the onion and mushrooms.
STEP 2:
In a pan, we will put the onion with a bit of salt and let it take colour.
When it has colour, we will add the chopped mushrooms and let them cook, stirring them from time to time.
STEP 3:
While the onion is cooking, we will remove the skin from the salmon and chop it into pieces.
STEP 4:
Once the onion and mushrooms have colour, we will add the chopped salmon. Once they are golden brown we will add the double cream, salt and pepper of your taste.
To finish the sauce, turn off the cook and leave it covered so that it rests, and the flavours concentrate while we boil the pasta.
STEP 5:
We will boil water with a bit of salt and a drizzle of olive oil. When the water boils, add the spaghetti and cook them for 5 to 7 minutes.
To find out when the spaghetti is ready, I have a fun anecdote to tell you.
When I was little, and my mother was teaching me how to cook pasta, she made me throw spaghetti against the wall and said that if it stuck, it was ready. So at first, I made them like that, until I preferred to eat one instead of throwing it against the wall to see if they were already soft. After a couple of years, I finally read the back of the package and realized that it indicated the cooking time.
STEP 6:
Once they are ready and before draining them, we will add a bit of the water to the sauce with the salmon. We will reheat the sauce, and when it is hot, we will add the spaghetti mixing everything very well so everything is cooked together.
STEP 7:
Finally, we will add the parmesan cheese and let’s eat!
